Taste is one of the senses most closely connected to memory. It is shaped by experiences, familiar gestures, shared recipes, and the moments spent gathered around a table. Often, that table is at home. It is where we first learn to discover the world through food, and where memories that stay with us begin to take shape.

Home Tasting was born from this idea. Through this project, Calligaris invites professional chefs to share the dish that brings them back home, turning the table into a place where memory, creativity, and everyday life come together. Because a home is made not only of objects, but of emotions, rituals, and stories worth sharing. And food is one of the most universal ways to tell them.

What does home taste like? For Alessandro Gavagna, chef at Trattoria al Cacciatore, the answer lies in a dish that brings together memory, place, and creativity: venison fillet with trout roe.

Two stories come together on the plate. The first is that of Trattoria al Cacciatore, told through the venison fillet, a symbol of a cuisine deeply rooted in the tradition of game. The second is more personal, emerging through the trout roe, a tribute to the fishing trips Alessandro shared with his father. Pistachio purée and extra virgin olive oil bring these memories together with elegance, creating a balance of flavours that embraces the present while honouring its roots.
